Two families

Super-automatic, or a traditional bar?

Almost every coffee decision in hospitality comes down to this one. It is not about which machine is better — it is about who will be standing in front of it at 07:30, and how many drinks they have to make before the queue gives up.

Super-automatic

One touch, grinder to cup, with fresh milk handled by the machine. The same drink from any operator, on any shift, with no barista skill required and a cleaning cycle the machine runs itself.

Right for — breakfast buffets, lobbies, meeting floors, staff canteens, self-service, small teams and high turnover.

Traditional / semi-automatic

Portafilter, grinder and a trained barista. Full control over dose, grind, temperature and texture — and a bar that becomes part of the guest experience rather than a service point.

Right for — signature cafés, specialty concepts, pool and beach bars with a dedicated barista, anywhere the coffee is a reason to visit.

In practice most properties run both. A super-automatic carries breakfast and the lobby; a traditional bar carries the signature outlet. Sizing them together — rather than buying twice — is usually where the money is saved.

The workhorse for properties that need volume without a barista. Separate boilers for coffee and steam, a stainless-steel brewing unit, and three fresh-milk systems to pick from depending on how milk-heavy your menu really is.

Coffee
Stainless-steel brewing unit, 18 g or 22 g chamber. Dual boiler — 0.5 L coffee, 1.9 L steam — so coffee and hot water dispense at the same time. Four pre-infusion levels, three pressure levels.
Grinding
54 mm titanium-coated stainless flat burrs. Up to two hoppers at 1.3 kg each, plus a manual input for decaf or a third coffee. Optional Self Adjusting Grinder (SAG) corrects in-cup drift in real time.
Milk
Three systems — Quick Milk, Top Milk and NMS+ — with per-drink temperature and frothing level, two milk types at once on the upper systems, and optional Cold Milk Foam (CMF) at three frothing levels.
Fridges
Quick Milk or FUM at 4 L, or the KS9 at 6.5 L with display, level sensor and integrated pump. Pump modules (SMPU) let the fridge sit under the counter.
Interface
5.7" HD touchscreen with 48 products, or a 10-button keypad with 16. Twelve languages, three access levels (barista / manager / technician), queue mode, and a self-service mode built for hotels.
Cleaning
Guided cleaning cycle in 4–9 minutes depending on configuration, programmable automatic rinsing, and the sealed Dura Brew unit to keep maintenance down.

A portafilter machine only pays for itself if someone is trained to use it. Where that person exists — or where you want us to train them — this is the equipment we put in front of them.

How we specify

Sized against your busiest hour, not your average day.

A machine rated at 300 cups a day will still fail you if 180 of them land between 07:00 and 09:00. This is the arithmetic we actually do.

Peak-hour demand

Covers in the busiest hour, not the daily total — plus the drink mix, because a latte is not an americano.

Who operates it

A trained barista, a breakfast attendant, or the guest themselves. This decides super-automatic versus portafilter.

Milk load

The proportion of milk drinks decides the milk system and fridge — and it is the thing most often underestimated.

Space & services

Counter depth, power phase, water hardness and drainage. Water treatment is specified before the machine, never after.

Water first. Every machine here needs treated water — the Dolce Krema manual calls for 5–8 °fH. Too soft and the hydraulics corrode; too hard and the boiler scales. We specify filtration with the machine, because it is the single most common cause of a "machine problem" that was never the machine.
